Las Terceras is a farm dedicated primarily to the production of Manchego Cheese with Denomination of Origin (D. O. P.).
Our exquisite cheese is gourmet products made by hand from milk obtained from the cattle and agricultural exploitation of our own farm.
It is located southeast of Ciudad Real in Torre de Juan Abad, between Valdepeñas and Villanueva de los Infantes.
Our offer of the third Manchego Artisan Cheese D. O. P. protected designation of origin includes tender, semi-cured, cured and old with intense flavor and pleasant aroma.
Our most precious delicacies are the selection of Manchego Cheese made from raw milk.
With hard bark in brown tones, the notes of sheep's milk are appreciated when tasting them, with a very personal aroma.
Creamy and smooth texture at the same time and a pleasant and deep taste.
A perfect bite whose persistence leaves a mild memory on the palate. Depending on the type of manchego cheese we make, our master cheese makers let their precious creations ripen in natural bark.
It is a period of 3 days to 2 months for the tender; 3-4 months for the semi-cured; 6 to 8 months for the cured; and more than 10 months for the old, until its optimum ripening point.
With unbeatable genetics and the proper feeding of our sheep we make our manchegos healthy products.
