Jamones Vallejo is a family-run company located in the town of Trevélez, in the heart of the Sierra Nevada Natural Park at an altitude of 1,750 m.

The jamonera family tradition of this town comes from ancient times.

The Vallejo family was the first to industrialize the process of cured ham in Trevélez by building a dry cleaners founded by D. Manuel Vallejo Prados in 1951, with the philosophy of offering a high quality ham.

Luis Jorge Vallejo, the current owner of the company maintains the same business policy, combining the tradition inherited, with the latest technical and technological advances for the production of ham.

Hams Vallejo Trevélez has the oldest hams dryer in the Alpujarra.

It was founded in 1951 in Trevélez , province of Granada, the highest town in Spain, and its gourmet hams are the most awarded in the Alpujarra (5 national awards).

History of Hams Vallejo Trevélez

On October 10, 1862, Queen Elizabeth II granted cured hams in trevelez the privilege of stamping on hams the seal of her crown.

Several quality controls from the seal or vitola surrounding the wrist to the final labelling of the parts are carried out by persons (technicians) of the Regulatory Council of the origin name Trevélez .

The Regulatory Board has stipulated 3 SEALs (blue, red and black) for trevelez Ham depending on weight, and the Blue Seal cure is for 7 kg to 7.5 kg hams and has a cure of 17 months

The Red Seal is 7.5 kg to 8 kg and its minimum cure is 20 months and finally the Black Seal has a weight of 8.5 kg to 9 kg and a minimum cure of 24 months.
