Cava sweet with notes of fruits of the forest.
Elyssia Pinot Noir Freixenet cava rosé, arguably, is the twin of the Elyssia Gran Cuvée in pink, the essence of Pinot Noir grown in the Penedès.
It has been used a clone typical of Champagne that has given a great result in the Penedès. Cava elegant, ideal for snacks and light dishes with a lot of personality.
The aging is done for 18 months, long enough to give the necessary freshness to the Pinot. Red fruits and body are characteristics of this cava universal.

Pinot Noir and Trepat
The varietal Pinot Noir is the protagonist of the base wine for this cava. The grapes come from our payment of the Mas Bernich, located in the municipal district of Masquefa in the Alt Penedès. The finca Mas Bernich consists of 92 hectares, of which 15 are Pinot Noir, planted in trellis with the conduction system of Royat-Double. Its soil is sandy-loam, with an average annual rainfall of 550 l/m2. Was pruned this variety 27,000 buds per hectare, to limit production to 6.500 Kg/ha and give the aroma and structure typical of this appreciated variety to the base wine.
In the second half of August is harvest, the Pinot Noir variety, which is characterized by a variety with a low tannic structure, which provides medium body and sensations elegant and fruity in the mouth. The harvest is mechanical and is done at night to preserve the sensory characteristics of the grape. Then carried out a maceration in pneumatic press for 5-6 hours, and using static in order to clarify the must before fermentation in stainless steel tanks at a temperature between 16-18°C with selected yeasts own.
TASTING notes
cellar live pinkish raspberry of medium intensity. Bubble plenty of medium size, with fine bubbles forming a good crown.
Cava very fruity with intense aromas of red fruit (ripe raspberry, currant and cherry).
Good presence of feeling fruity in the mouth, tasty, sweet, with refreshing acidity and a long finish with flavors of fruit well ripened.
food PAIRING
This rosé can be drunk from the moment of the aperitif to the dessert. Combines perfectly with cold meats, cheeses, fish, seafood, roasts and of course with a multitude of desserts.
Is it recommended to take cup of the flute, and the temperature of consumption is between 6º-8º C.
